Sticky Marmalade Duck

More zingy.

A wonderfully crisp fillet of duck glazed in a rich and tangy marmalade sauce. Sounds spectacular, takes less than 30 minutes to make.

It's easy, all you need is:

2 Farm Fresh Duck breast fillets
100g of your favourite orange marmalade
50ml good soy sauce
1 tbsp sesame seeds, toasted
1 orange cut into wedges
Handful of watercress to serve.

(serves 2)

Here's how to make it:

  • Preheat your oven to Gas mark 7, or 200°c
  • Make a few cuts on the skin of the duck breasts. Add a little salt and pepper and sear in a hot frying pan over a high heat for 2 minutes each side.
  • Remove your fillets from the pan and place in a small ovenproof dish. Then clean the pan and return to the heat.
  • Add your orange wedges to the pan and heat gently until they start to caramelise.
  • In a small bowl, mix the marmalade, soy sauce and sesame seeds together and pour the sauce over your fillets.
  • Then pop them in the hot oven for 10-12 minutes, surrounded by the orange wedges.
  • Finally, remove from the oven and allow to rest for 5 minutes before cutting into thick juicy slices. Serve with orange wedges and fresh, crisp watercress.

And that's it - wonderfully sticky marmalade duck.
