Succulent Filo Duck Parcels

Tender duck wrapped in light, tasty parcels to create an extra special and extra delicious party snack.

It's easy, all you need is:

½ Farm Fresh Duck, roasted, cooled, skin removed and meat shredded
5/6 spring onions, finely chopped
A large handful fresh bean sprouts, chopped
100ml hoi sin sauce
300g pack chilled filo pastry
100g melted butter

(makes about 20 parcels)

Here's how to make yours:

  • First preheat the oven to Gas 6, or 200°c
  • Chop the spring onions with a sharp knife and mix with the bean sprouts, shredded duck and hoi sin sauce.
  • Keeping the filo pastry under a damp cloth to prevent it from drying out, cut it in half lengthways to create strips and then brush the top strip with a little melted butter.
  • Take the two strips of pastry from the top of the pile to make your first parcel.
  • Take a spoonful of the shredded duck mixture and place it on the bottom corner of the first strip. Fold two layers of the pastry over to the opposite corner to form a triangle. Continue to fold pastry over to opposite corners, until you reach the end of the strip, occasionally brushing with melted butter. Lightly brush the top of your parcel with melted butter and place on a lined baking tray. Repeat this process to make the rest of the parcels. 
  • Pop them in your preheated oven for 15 -20 minutes until they are a lovely golden brown colour and are slightly crispy.
  • Serve with hoi sin sauce dip and treat your guests to the perfect party snack.
